Swedish Apple Pie


This is my favorite apple pie recipe. Mostly because it's easy and doesn't require me to roll out a pie crust. It has to be eaten the first day, though, because the pie crust becomes soggy the second day.



Pie Crust
1 1/2 cups flour
1/2 tsp salt
1 1/2 tsp sugar
2 T milk
1/2 cup canola oil

Swedish Apple Pie Filling

3 T flour
1/4 tsp salt
3/4 cup sugar
2 eggs
1 cup sour cream
1 tsp vanilla
1/4 tsp nutmeg
pinch cloves
1 tsp cinnamon
6 medium green apples, sliced and soaking in lemon water

Crumb Topping
1/2 cup brown sugar
1/2 cup flour
2 Tblsp melted butter

Directions

Heat your oven to 400 degrees. Mix the pie crust ingredients together and press with your fingers into the 9-inch pie plate.

Mix all the ingredients, except the apples, for the filling together, making sure the eggs are well-beaten before combining with the rest. Drain the apples into a strainer, and let sit for a few minutes to dry off, then add into filling mixture. Pour this into the pie crust.

Mix the crumb topping together and crumble it over the pie filling. Bake for about 25-30 minutes, until the egg mixture is set.

Must serve with Vanilla Bean Ice Cream!
