Jewel Cookies

...otherwise known as thumbprint cookies, but who wants to think about someone's thumb sinking into the top of their cookie? So, I've renamed them. Jewel Cookies because of the beautiful jewel tones the jam creates.
 

2 sticks butter, room temperature
3/4 cup sugar
1 egg
2 1/2 cups flour

Mix all together and roll into round 1 inch balls, or use a small scoop, then flatten slightly. I like to use my ring finger, not my thumb, to press a perfect circular crater into the top of the cookie. Warm any jam of your choice, or a variety for several different colors, and fill the "crater" to the top with the jam. Bake at 350 for 18-20 minutes. Remove right away to cool.
