Mint Chocolate Chip Cookies

I love the combination of mint and chocolate, and these cookies are chewy with just the right hint of mint. Enjoy!



1 1/2 cups white flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup brown sugar
1/2 cup white sugar
1 stick (1/2 cup) butter, room temperature
1 egg
1 teaspoon mint extract (not peppermint)
1/2 cup chocolate chips, heaping (the more, the better!)

Sift flour, salt, and baking soda together. Cream sugars and butter until fluffy, then add egg and mint extract until fully incorporated. Add the flour mixture and the chocolate chips. Beat until fully mixed and scoop onto an ungreased cookie sheet. Bake at 375 about 8-10 minutes, rotating from top to bottom rack partway through. I always let my cookies sit on the pan about 2 minutes before moving them to a cooling rack.
