Baked Oatmeal



Baked Oatmeal. I've met very few people who eat it the way I grew up eating it. It seems it's more common to pour milk over it and eat it like hot cereal. I love it this way! Here's the recipe:

Ingredients:

1/2 cup butter
3 eggs
3/4 cup brown sugar
2 teaspoons baking powder
2 teaspoons vanilla
1/4 teaspoon salt
1 1/2 cups milk
4 1/2 cups rolled oats (not quick)

If you want to save on your expensive pure vanilla, just omit it. And do not use quick oats, or it'll be mushy!

Directions:
Melt the butter and combine with the brown sugar and eggs. Sprinkle the baking powder over the top, making sure it doesn't clump, then whisk it in. Add everything else, mix well, and pour into a buttered 9 x 13 pan. Bake at 350 about 45 minutes. Top with any flavor vanilla and any kind of berries. My favorite is in the picture: vanilla yogurt with strawberries.
