Sweet Potato and Carmalized Onion Shells


We had these beauties with salmon for dinner a couple nights ago....mmm.

Ingredients:

1 large onion, chopped, about 1 1/2 cups
3 tablespoons butter
5 cloves garlic, minced
1/4 teaspoon salt
1 box jumbo pasta shells, cooked according to box directions, and cooled
1/4 cup chicken broth
1 tablespoon apple cider
1 teaspoon thyme
1/2 teaspoon pepper
1 1/2 cups mashed sweet potato
4 ounces Gorgonzola cheese, crumbled
1/2 cup parmesan cheese
2 tablespoons minced fresh parsley

Saute onion in butter until soft, then add garlic and salt and cook on medium low until light brown, about 25 minutes. Combine everything else except the parmesan cheese and parsley. Mix well and spoon into the shells in a buttered 9 x 13 dish. Sprinkle with parmesan cheese and parsley. Bake, covered, about 15 minutes at 375.
