Ciabatta Breakfast Toasts


This is good for breakfast or for a light lunch, either alone or with soup (roasted red pepper soup!). They are a little messy to eat, but totally worth it- a perfect combination!

Ingredients:
4 Roma tomatoes
8 slices low-fat bacon (I like turkey bacon)
2/3 cup cottage cheese
2 Tablespoons chopped parsley
1 Tablespoon diced chives
8 slices ciabatta bread, or similar fresh bread
balsamic vinegar

Cut Roma tomatoes in half the long way and lay face-up on a baking tray. Pat the bacon dry with a paper towel and put it on the tray also. Sprinkle pepper over both. Broil in the oven 5-8 minutes, until the bacon is crisp, turning it over after 3 minutes.

Slice the ciabatta bread thickly at an angle and toast. Combine the cottage cheese, parsley, and chives and spread it over the toast. Arrange the tomatoes and bacon on the cheese and drizzle with balsamic vinegar.

This makes 8 toasts, or 4 servings.
